I like the way these sesame beets look in this bowl. The deep red/purple color brings out the purple in the glaze. I never cared for beets as a kid - but now I love them. My favorite recipe is from the Moosewood Cookbook.
Sesame Beets
1 pound beets
2 T fresh lemon juice
1 to 2 teaspoons cider vinegar
1 T toasted sesame seeds
2 T minced onions or scallions
1 teaspoon sugar
salt and ground black pepper to taste
- trim and boil beets until tender.
- remove skins.
- toss with lemon juice, vinegar, sesame seeds, onions or scallions, and sugar
- add salt and pepper to taste.
- chill thoroughly for about 30 minutes and serve.
